500 g of rumsteak β€’ 30 g of walnuts β€’ 1 onion β€’ 3 basil branches β€’ 70 g Parmesan cheese β€’ 1 tablespoon of red wine vinegar β€’ 1 tablespoon of mustard beans β€’ 1 tablespoon of Ketchup β€’ 2 tablespoons of walnut oil β€’ 1 tablespoon of capers β€’ 4 egg yolks β€’ salt and pepper

  • Finely chop nuts, onion and basil leaves.
  • Chop meat.
  • Whisk vinegar, mustard, ketchup, salt, pepper and oil in a bowl. Add the meat, nuts, onion, basil and drained capers. Mix and adjust the seasoning if necessary and reserve in a cool place before serving.
  • Shave parmesan cheese.
  • Form 4 meat pies, place an egg yolk in the center, add basil leaves and arrange Parmesan shavings on top.
  • Serve beef tartare with a green salad and fries.
