500 g of rumsteak • 30 g of walnuts • 1 onion • 3 basil branches • 70 g Parmesan cheese • 1 tablespoon of red wine vinegar • 1 tablespoon of mustard beans • 1 tablespoon of Ketchup • 2 tablespoons of walnut oil • 1 tablespoon of capers • 4 egg yolks • salt and pepper

- Finely chop nuts, onion and basil leaves.
- Chop meat.
- Whisk vinegar, mustard, ketchup, salt, pepper and oil in a bowl. Add the meat, nuts, onion, basil and drained capers. Mix and adjust the seasoning if necessary and reserve in a cool place before serving.
- Shave parmesan cheese.
- Form 4 meat pies, place an egg yolk in the center, add basil leaves and arrange Parmesan shavings on top.
- Serve beef tartare with a green salad and fries.
