600g ground beef β’ chopped chives β’ 8 gherkins β’ 5 tablespoons of capers β’ 2 tablespoons of wholegrain mustard β’ 1 tablespoon of oil β’ salt and pepper

- Mix the minced meat with the mustard, the capers, the gherkins cut in small dice and the chives, salt, pepper and make 4 palets.
- Heat a pan with the oil and quickly cook the beef palets, just 30 seconds on each side to keep the “tartare” style.
- Serve the tartare-style ground beef with a watercress salad and some fries.
